It is Meton, an industrial or artisanal cheese that is used to make Cancoillotte.
Meton is made from skimmed, curdled milk, finely cut and heated to 60°C before being pressed, crushed and then aged for a few days.
To obtain the Cancoillotte, melt Meton over low heat in a little water or milk, and add salt or butter.
Can be eaten hot or cold on bread, for breakfast or as a snack, with vegetables or meat.
It can be found in jars, plain or flavored with butter, garlic or wine.
